No yeast, no eggs, no deep frying

LevelEasy

Donuts made from sliced bread — no yeast, no eggs, no proving and no deep frying. The bread is torn up, kneaded with condensed milk, vanilla and a little milk into a soft moldable dough, shaped into rings, air-fried until golden, then dipped in melted chocolate and decorated. About 20 minutes from bread to donut. Made on the channel by Maya.

Ingredients

  • 6–8 slices soft white bread (8 if small slices, 6 if large or thick)
  • 1 tsp sweetened condensed milk
  • 1 tsp vanilla essence
  • Full-cream milk, as required — added little by little
  • Melted butter, for brushing
  • Melted chocolate of your choice, for coating
  • Sprinkles, crushed nuts, coconut or chocolate chips, to decorate (optional)

Method

  1. Prepare the bread: cut the crusts off all four sides of each slice, then tear the bread into small pieces.
  2. Flavour it: add the condensed milk and vanilla essence to the torn bread.
  3. Make the dough: add the milk a little at a time, mixing and kneading as you go, until you have a soft, moldable dough. It can be slightly sticky but must not be runny — if it goes too wet, tear in more bread until it comes back.
  4. Shape: roll portions of dough into balls, flatten them slightly and press a hole through the centre of each one.
  5. Air fry: brush the donuts lightly with melted butter and cook in the air fryer until golden and cooked through. Times vary by machine and donut size, so watch them.
  6. Coat: dip or drizzle the donuts with melted chocolate.
  7. Decorate with sprinkles, crushed nuts, coconut or chocolate chips, and serve.
From the video: Add the milk a teaspoon at a time — different breads absorb very different amounts, and a wet dough is the one thing that stops these holding their shape. If you overshoot, tear in another half slice of bread.
