Crispy Chicken Burger
Air fryer · no deep frying
A homemade healthy crispy chicken burger — crispy, juicy and delicious without deep frying. The chicken is cooked in the air fryer for a crunchy coating with much less oil.
Ingredients
- Chicken marinade: 500 g boneless chicken · 1 tsp salt · ½ tsp black pepper · 1 tsp chicken powder · 1 tbsp plain yogurt · ½ tsp teriyaki sauce · 1 tbsp olive oil · ½ tsp apple cider (or any) vinegar · ½ tsp soy sauce · ½ tsp brown sugar
- Egg coating: 3 eggs · ½ tsp salt · ½ tsp black pepper
- Crispy coating: 1 cup breadcrumbs · 1 tsp paprika or red chilli powder · 1 tsp garlic powder
- To build: burger buns · burger sauce · chilli-garlic mayonnaise · mustard powder · cheese slices · iceberg lettuce · caramelised onions
Nutrition is an estimate per serving.
Method
- Season the boneless chicken with all the marinade ingredients.
- Beat the eggs with salt and pepper. Mix the breadcrumbs with paprika and garlic powder.
- Coat each piece: egg → breadcrumbs. For extra crispy, double-coat: egg → crumbs → egg → crumbs.
- Air fry about 15 minutes, flip, then another 15 minutes, depending on thickness. Make sure the chicken is fully cooked.
- Meanwhile make a simple burger sauce and caramelise the onions.
- Assemble: bun, sauce, lettuce, crispy chicken, cheese, caramelised onions, top bun.

Notes on this recipe
The double coat is what makes it crispy
Egg, crumbs, egg, crumbs again. The second layer roughly doubles the crust thickness and gives the surface the irregular texture that catches heat and crisps unevenly, which is exactly what you want. A single coat gives a thin, flat crust that softens as soon as sauce touches it. Press the crumbs on firmly at each pass rather than dusting.
Yogurt in the marinade is tenderising
The yogurt is not there for flavour. Its acidity and enzymes loosen the protein structure in the chicken, which keeps it tender through a long cook. Thirty minutes does something; a few hours does more. The sugar in the marinade matters too — it helps the surface colour in an air fryer, which otherwise struggles to brown anything.
Fifteen minutes a side, and check
Thickness varies more than people expect, and a thick fillet that looks golden can still be underdone. The crust browns long before the inside is ready, so colour is not the test. 74 °C in the centre is. If the crust is darkening too fast, lower the temperature rather than shortening the time.
Assembly order
Sauce on the base bun, then lettuce, then chicken. The lettuce is a moisture barrier between the sauce and the crust, which is the only reason the bottom of the burger is not soggy by the time you eat it. Cheese goes on the hot chicken so it melts; caramelised onions on top of that. Eat immediately — crispy coatings have a short life once assembled.
